Welcome 2010!!!!! Yay, it's here!!!! There's something special about straring a new year. It feels like a new start in other areas of life too. I welcome those New Years Resolutions! How did everyone bring in the new year? I can never stay up that late, so I slept in tghe new year. I guess that means I'll have a well-rested year:-) We did stay up a little bit later playing Monopoly and eating chocolate cake. You can't welcome a new year without cake:-) I was just trying to get my cake in before the diet begins. Let's get to the good stuff, here's my resolutions for the new year:
1). Go to church on Wed. nights (for most people this is not a biggie, but I'm usually in bed before the service is over, but I know it's so important and helpful)
2). Lose 20lbs. (I'll do this by doing The South Beach diet and working out 5 hours a week. Also, I bought some ankle weights to wear during the day while doing chores)
3). Increase our offering at church
4). Save for a family vacation (about $50 a month. It's a fun but pretty inexpensive one)
5). Watch my words with my husband. Only say what I mean.
6). Speak more kindly with my children when I'm tired and frustrated.
7). Tell my family everday that I love them, even if they're being quite unlovable:-)
Well, those are my resolutions. This morning I woke up and was so thankful to God for this brand new day, this brand new year, this brand new start. It was time to test out that "diet resolution", we're off to a good start. I made vegetable quiche cups for breakfast. They were super yummy so you know I can't hold back from sharing.
Vegetable Quiche Cups
1 10oz. pkg of frozen spinach
6 eggs
3/4 c. cheese
1/4 c. diced green bell peppers
1/4 c. diced onions
Microwave spinach to thaw out. Spray muffin pan with non-stick spray. Combine eggs, cheese, peppers, onions, and spinach. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees for 20 min.
